In order to find the data requested, I used Factual's US Restaurant Data and did a search for each city. For the Dallas/Fortworth area, I looked at both Dallas and Fortworth separately and combined the totals. On the side of each search, Factual provides a list of fast food restaurants and how many of each restaurant is in each city. I used these numbers to determine the number of independent restaurants by subtracting the total number of all fast food restaurants from the total number of restaurants in the entire city.

Small chain restaurants are defined as chains with less than 15 restaurants in the city. I've provided the total number of small chains by two categories. For example, if Starbucks has 5 locations and Wendy's has 5 locations, this would be considered a 2 for number of small chains but a 10 for total number of small chains. This gives you an idea of how many unique small chains are in each city as well as the total of all locations.

I've created a spreadsheet with the following categories:

-Number of Independent Restaurants
-Number of Small Chains (per chain)
-Total Number of Small Chains (The sum of all small chains)
-Total Number of all Chains
-Total of All Restaurants (independent and chains)

CALCULATIONS

I used the total number of all restaurants (Column F) and subtracted the total number of chains (Column E) to find out the total number of Independent Restaurants (Column B).

Example:
San Francisco has 10,423 total restaurants and 296 of them are considered large or small chain restaurants for a total of 10,127 independent restaurants.

San Francisco:
10,423 - 296 = 10,127

New York City
31,914 - 1,026 = 30,888

Philadelphia
11548 - 584 = 10,964

Boston
3,989 - 1,072 = 2,917

Chicago
16,720 - 1,315 = 15,405

Washington DC
6,380 - 410 = 5,970

Los Angeles
16,992 - 888 = 16,104

Greater Miami
3,861 - 176 = 3,685

Dallas/Fortworth
11,543 - 1,299 = 10,244

Atlanta
6,560 - 662 = 5,898
